Mediterranean island of Menorca, is one of very few cow&rsquo;s milk cheeses from Spain. The soft artisan cheese, for sale here at a food market, has a sharp, lemony, yet salty flavour, derived from the salty sea grass on which the cows generally feed. Its rind contains a hard, crumbly cheddar-like texture and darkens as it ages. It is tangy, intense and delicious.
